Kay papa has specifically requested for a banana walnut cake eve since I started my baking frenzy. Since I have been a cake and slices fanatic for the longest time, I took up the order. This special evening, since I am pretty free (papa is at my mum’s looking after little girl and sister is assisting him, so, she is not bunking over) and that migraine is gone, I decided to just bake it!

The end result?! YUMMY! Hahaha…

So, for those interested, here’s the recipe.

Banana and Walnut Cake

Preparation time: 15 minutes or less


125 g butter

3⁄4 cup sugar (I put in140g instead of 160g because I do not want it too sweet)

1⁄2 cup chopped walnuts (I had no time to chop. So, I smashed instead and it gave the surprising chunky bite. Also, I put in more walnuts. About 160 g)

13⁄4 cups self-raising flour (245 g Plain flour, 2 1/2 teaspoon baking powder, 1/2 teaspoon salt)

2 eggs, beaten

3 large bananas, mashed (One of the most generous recipes when it comes to bananas. I think those who love bananas, can consider more)

1 teaspoon bicarbonate of soda

3 tablespoon milk

1 tablespoon boiling water


1. Cream butter, sugar and water together.

2. Gradually add eggs, then the mashed bananas.

3. Dissolve bicarbonate of soda in milk and add flour alternately with milk to banana mixture.

4. Add chopped walnuts.

5. Bake at 180°C for about an hour or until knife comes out clean.
